Jeddah's flagship Iranian restaurant re-opens its doors in Persian style.
Show-casing a display of sophisticated and imaginative cuisine, as colorful and complex as a Persian work of art, the event attended by media and a select few of the restaurant exclusive clientele.

Walking into the Al Khayyam it is clear why it is home to the finest caviar selection in Jeddah. The ambience and lent by the décor inspired by the Persian culture, take you through an inexplicable journey back in time. However the jewel of Al Khayyam must be the medley of Iranian caviar, the finest of the Caspian's Beluga, Sevruga and Osestra, in Jeddah. Served on silver trolleys at your table-side, one taste and you will know why caviar is synonymous with luxury and wealth.

"Persian Cuisine is exotic yet simple similar to a poem. It is healthy, yet colorful, like Persian miniature painting," says Maestro Mehdi Mesripour, the authentic Iranian chief who recently joined the eatery's outstanding culinary team. "It is a combination of rice with meat, chicken or fish and plenty of garlic, onion, vegetables, nuts, and herbs. To achieve a delicious taste and a balanced diet, unique Persian spices such as saffron, diced limes, cinnamon, and parsley are mixed delicately."

The Cuisine of Persia influenced cooking all over the world, from the beef dishes of India, to the sweet and sour that graced the tables of Medieval and Renaissance Monarchs. "From cultural point of view, Persian food has always been considered to be an art providing enjoyment to both body & mind, and this is what we achieve at the Hilton." Restaurant Manager Khalid Zahran said "Persian recipes have matured over the centuries to bring the taste out of the fresh ingredients used to prepare the unique Persian food, and following this tradition, Chef Mehdi only uses the finest fresh ingredients to prepare its dishes and exclusive cocktails".
