Apollonio said his interest in food began early in life and that his dream is to be a chef known for passion and creativity.
Apollonio added:
"I have many hobbies, but most of all I enjoy cooking. It is this passion that has made me realise that this is the job of my life."
Marco Aveta the Operations Manager at Radisson SAS, DMC, said: "With Apollonio at helm of kitchen we will bring the chic fine-dining experience to a new level. Cuisine is all about good food and more. It is about style, ambiance and service and Certo has already scooped top honors at the Time Out awards for its innovative Italian dishes."
He said that Certo is known as a trendy restaurant that serves a selection of antipasti, homemade pastas and a unique selection of pizzas from a traditional wood-fired oven. The show kitchen features a wide selection of fine olive oils, while the six-metre tall special storage tower is an impressive focal point, housing 500 vineyard selections from around the world.
"My move to Dubai offers an opportunity to present my skills to a whole new market. The new experiences will challenge my creativity even further and I am excited by the prospect," Apollonio said.
Radisson SAS Hotel, Dubai Media City is located in the heart of the emirate's emerging regional technology and communications hub and offers 247 rooms, including five suites, designed in a contemporary style.
