The cuisine is further complemented with carefully selected organic wines and champagne, while a selection of tasting menus provide opportunities to share and enjoy multiple gastronomic experiences.
David Thomson, General Manager of the Jebel Ali Golf Resort and Spa, said:

Guest feedback since the soft launch has been very encouraging and we are truly delighted by the fact that this new initiative, which incorporates freshly grown ingredients from the resort's bio garden, also makes its own small positive contribution to the environment."
The menu has been compassionately composed by Executive Chef Didier Gusching and Signatures Chef de Cuisine Shaji Cacko. Gusching, who also initiated the resort's bio garden project, said he was "very happy to be part of a new concept that ties up classically prepared cuisine with new trends in the food and beverage industry."
The Jebel Ali Golf Resort & Spa also updates its corporate social responsibility initiatives by screening the Green Peace list of endangered species and as a result no longer includes foie gras, veal, cod fish or red tuna in its restaurants. The resort also supports the WWF's 'Check out for Nature Programme' through its affiliation with the 'Leading Hotels of the World'.
Signatures is open for dinner from 7pm to 11pm, except Monday nights. It also serves as the exclusive breakfast venue for resident Royal Jasmine guests staying at the Palm Tree Court & Spa.
The 128-acre Jebel Ali Golf Resort & Spa features two hotels, namely the original Jebel Ali Hotel and the luxurious Palm Tree Court & Spa, a member of 'The Leading Hotels of the World'. In addition to its 9-hole championship standard golf course, the resort also comprises an 800 metre private beach, three swimming pools, horse riding stables, 80-berth marina for fishing trips and boat charters. A handpicked selection of Elemis, Wild Earth and MD treatments can be enjoyed at The Spa, a member of 'Leading Spas'.
