Atlantis, The Palm invites guests and residents to experience a once-in-a-lifetime meal prepared by Michelin-starred Chef, Giorgio Locatelli and his team of chefs on 15 March 2009.
Atlantis, The Palm, has turned into the culinary destination of Dubai since opening in September and Ronda Locatelli offers the freshest ingredients in a warm and inviting atmosphere.
At Ronda Locatelli, Giorgio Locatelli creates a rustic, warm and inviting restaurant that blends the charm of an Italian countryside with the modernity of Dubai. Sophisticated traditional Italian-style cooking uses the freshest of ingredients and is served family style, from brick-oven pizzas to delicate pastas.
The special dinner begins with a wide selection of fresh breads and crispy pizza. The pizza is done in true Italian style with the best available ingredients in the simplest combinations and with the thinnest of crispy crusts. The pizzas are prepared in the round hearth in the centre of the restaurant home to the four pizza ovens and allows for the perfect temperature to be reached.
A salad of Sardinian artichokes and Parmesan is the perfect starter to this culinary experience. The artichoke, prized and prestigious in the agriculture of Samassi, is considered a product of the highest quality in Sardinia. The combination of marinated and raw artichokes give an interesting contrast of texture and flavour in the salad. When the artichokes are combined with perfectly aged Parmesan, it truly brings out the flavours of these two ingredients.
Italian natives call it brodetto, which means "little broth," a name that is always puzzling because the last thing a brodetto resembles is a "little broth." A brodetto is an extremely rich soup, overflowing with many different residents of the sea, and served over fried or toasted slices of peasant bread. Giorgio makes his complete with prawn ravioli and the freshest mussels and clams served over toasted slices of bread.
A veal filet is prepared with a mustard crust and served over borlotti beans. The mostardi di Cremona gives a nice sweet and spicy taste to the veal while protecting the meat. Mostardi di Cremona is the typical hot and sweet 'mustard fruit' of Lombardia and is made up of pieces of candied fruit, mixed with honey, white wine, mustard and spices. Borlotti beans are Italy's noble bean and grow in cream and claret flecked pods, with a slightly nutty flavor, rounding out the heartiness of the dish.
The meal is topped off with Amalfi lemon cream with meringue and sorbet. This dessert is reminiscent of the Amalfi coast. Amalfi Coast lemons are unique as they are a very large fruit, able to reach the size of a grapefruit, with a strong scent and juicy-sweet. They are the secret behind the intense flavour of Limoncello and the desserts prepared in the Amalfi Coast's pastry shops. They are easily distinguished from other lemons in markets because they are the only lemons picked with the stems on. It truly makes for the perfect end to the journey. Guests are invited to savour the evening with coffee, tea and Amaretti, the famous macaroons from Giorgio's region of Lombardia.
For wine lovers, guests can choose to partner the gastronomic experience with the outstanding new achievement in wine production from Marchese Lodovico Antinori. The wine selection will feature premium wines from "Mount Nelson" New Zealand, "Campo di Sasso" Italy, and "Tokaij Baron Bornemisza" Hungary. The Sauvignon Blanc is produced in the Marlborough region of New Zealand and has been selected in order to create a wine which combines the liveliness of the New World with the classical style of Europe. The red wines served will be from Italy, complementing the Italian cuisine. The grapes for this red wine come from young vines which, in spite of their youth, express a strong personality, combining smoothness and structure. Finally, to accompany the tantalizing dessert, Tokaij Baron Bornemisza from Hungary will be served.
