Top Emaar Hospitality Group chefs share their most delectable recipes

Get ready for a culinary explosion as top chefs from Emaar Hospitality Group's diverse restaurants come together each month at a chosen venue, to create a one-off unique menu, coupled with a variety of beverages.

The first such 'Kitchen Confidential' event called 'The Address at Nineteen', will be hosted on March 19 at the award-winning restaurant, Nineteen, The Montgomerie, Dubai and this will be followed by another at Dubai Polo and Equestrian Club on April 15.

The evening kicks off with some imaginative appetizers from The Montgomerie's own Executive Chef, Kevin Little. Master of unique creations, Chef Kevin will prepare Loin of Salmon with Escabeche of Baby Vegetables and Cauliflour Cream. Next, Doxis Bekris, of the upcoming The Address, Dubai Mall, picks up the tongs to present some Dill Breaded Scallops inspired from his philosophy that guests need to be guided by their five senses. Emaar Hospitality Group's Culinary Leader Chef Simon Barber continues the culinary journey by concocting a wondrous fusion of Crab and Split Pea Risotto with Crusted Egg Yolk and Lemon Espuma.

From the soon-to-open The Address, Dubai Marina, Chef Cark Stokenstrom diverges from the seafood flavour of the evening and cooks up a gastronomic storm with Quail served with delicate Foie Gras in a dish deeply inspired by his German and South African origins. Then head hauncho and ex Michelin Star chef, Viktor Stampfer whirls in with a most delectable combination of Veal with Asparagus, a dish also detailed in his Cookbook "Sous Vide - cooking in vacuum".

Finally, renowned for his eclectic and delectable desserts, Executive Chef Uwe Faust of The Address, Downtown Burj Dubai uses a form of molecular gastronomy to create sweet delights such as Chocolate Chili Noodle with Strawberry Consommé and Ice Cream Bon Bon with Asian Flavors. The entire menu above will be complimented with a variety of freshly baked breads by head baker Patrick Beudot, of The Address, Downtown Burj Dubai.

Chef Stampfer said:

"The collaboration of various chefs from Emaar Hospitality Group and The Address Hotels + Resorts with Nineteen is an innovative idea to build team spirit and integration between chefs at our restaurants. It also drives sharing of knowledge and expertise. The tie-up and mix of such a variety of advanced skills in different areas will ensure the set menu on the night will be a delectable culinary experience."


He added: "With hotels, serviced residences, golf courses, a polo club and yacht club, we are at the forefront of the hospitality and leisure industry regionally, and we wanted to create further synergy between all units. This new initiative, which is to become a monthly experience in our different venues, fosters team spirit among our Chefs as well as offers a new and unique culinary experience for those who join us during these unique evenings of fine dining."

The six-course menu along with specially selected beverages to complement each course is extremely well priced at Dhs295 per person and will be served from 7pm to 11.30pm. For bookings please call 04 390 5600.
