Atlantis introduces a special tapas menu for its guests

Atlantis, The Palm has just introduced a special tapas menu that guests and visitors can experience at the Ossiano Bar, starting 10 April 2009.
Chef Santi Santamaria looked to his Catalan roots and love of fresh seafood to design the ever-evolving menu.
His cooking, in traditional Catalan style, is simple yet sophisticated, and dominated by his respect for the seasonality of food. Santamarķa pays meticulous attention to the creation of flavours.
The Prestige Tapas menu will be a set menu of 14 courses. While the menu will continue to evolve, the quality of the products used will be the best found seasonally. For instance, one can imagine the freshest scallop, prepared with grapefruit and orange oil, sliced delicately and served carpaccio style or a red mullet escabeche, a rich tasting white fish prepared in a marinade, served over a tantalizing onion jam.
The shellfish often used in Catalan cuisine will also be on offer, traditional mussels with paprika oil, served with sofrito, a light sauce of garlic, onion and tomatoes in olive oil, often used as the base for many dishes in Spanish cuisine and migas. This is a classic dish served with Chef Santi's flair and focus on flavour. Or guests can discover fresh cockles (clams) marinated with saffron.
In addition to the outstanding seafood that Chef Santi Santamaria is known for, he is also using his intense flavours to add his signature to Middle Eastern cuisine. Guests can expect such tapas as lentils with foie gras. Served indulgently in a cast iron pot, the seared foie gras melts over the simmering lentils.
The evening will wind down with a selection of fresh sorbet, with such flavours as passion fruit or coconut. The sorbet is the perfect cleanse of the palate just prior to the final treat of dessert. Desserts will also feature the finest and freshest ingredients. One can expect such delights as Baba with vanilla ice cream.
Guests can also choose to pair wines from the Ossiano cellar with The Prestige Menu. A wide variety of cava, champagne, and red, white and dessert wines are available both by the glass and the bottle. Our expert sommelier will be able to assist guests in making the right selection.
Immediately off the Grand Lobby of the Royal Towers, Santi Santamaria opened his first restaurant outside of his native Spain. Among the most elegant and romantic of all Atlantis restaurants, Ossiano offers superb seafood in a stunning setting in the underwater world of Atlantis. An elegant and mysterious space designed with variations of silver and pearl, it is the perfect location for an intimate dining experience, with unmatched views into the marine habitat filled with live sharks and fish.
Ossiano is open Monday-Saturday for dinner only. The Prestige Tapas menu is served exclusively at the Ossiano Bar, in Spanish tradition. The luminescent bar is perfect for intimate conversation and a memorable culinary discovery.
