Following on from the popularity of the EBISU set-lunch, Zuma has extended its award-winning menu to include new dishes derived from the most frequently requested Zuma signature dishes.

EBISU is a light and healthy lunch-time option, consisting of miso soup followed by three courses. There are 16 options, including Zuma's popular maki rolls and vegetarian dishes such as 'tomato and eggplant salad, with ginger and spring onion dressing'.

Zuma's executive chef, Colin Clague, added the most popular signature dishes from Zuma's à la carte menu: crispy fried squid, stir fried beef with sweet chilli sauce, and salmon terikayi. Marinated black cod, a favourite with Zuma regulars, now features on the EBISU as a starter, served in the form of gyoza dumplings, as well as on the main menu as a topping to the traditional Japanese dish don buri, a bowl of cooked rice flavored with delicious don buri sauce.

"The lunch menu has been such a success we decided to increase the range of options, particularly as the weather warms up in Dubai. There are many lighter choices like the seabass sashimi salad with ume boshi dressing," said Colin Clague, executive chef at Zuma.

For busy executives on the go, Zuma has added an even quicker set-menu at lunch time - EBISU EXPRESS. It consists of miso soup and any main course from the EBISU menu. Lunch is served daily from 12:30pm to 3pm and reservations are recommended.

Zuma's bar & lounge is open from 12:30pm-2am from Sunday to Thursday and from 12:30pm to 3am on Fridays and Saturdays. The restaurant is open for dinner from 7pm to midnight from Saturday to Wednesday and from 7pm to 1am on Thursdays and Fridays.
