Handi at the five star Taj Palace Hotel will take diners to a culinary journey to the desert region of India --Rajashtan.
"In association with Indian Airlines as co-sponsor, Handi has flown-in two chefs: Chef Gyan Singh and Chef Kailash Chand from our sister Taj property in Jaipur, from The Rambagh Palace. Our visiting chefs will introduce to Dubai what are perhaps the best cuisine specials from their home state of Rajashtan. Dal, Bati and Churma are just some of the popular Rajashtani meals that will be served during this festival, nonetheless, it will come with a unique twist specialized only by our Taj Chefs," says Michael Kasch, the hotel's Director of Food and Beverage.
The fact that a large community of Indians coming from various regions inhabits Dubai, Rajashtan known for its desert plains and rugged hills always stands out because of its distinct culture and cuisine. The desert climate, lifestyle of its tribes, and the availability of ingredients in this region influences Rajasthani cooking. A great degree of cooking involves the frequent use of buttermilk and ghee as alternative for water. Spices like turmeric, coriander, mint and garlic, which is bountiful in Rajashtan, livens up any flavorful Rajashtani dish.
