New chef to add zest to The Cellar restaurant's menu

Newly appointed executive chef, Dewet Van der Westhuizen, is revamping menus at the Cellar restaurant, The Aviation Club's own fine dining restaurant, prior to the launch of new restaurants next year as part of the expansion project at the Club.

According to general manager, Gerard Kearney, bringing in new talent ensures cuisine is revitalised and guest's expectations are always met and exceeded. With Dubai offering a large spectrum of culinary specialties and food concepts being revamped everyday, the challenge is to keep up with the pace while being loyal to regular patrons.

"However, Chef Dewet has already demonstrated his multi-cultural skills, by introducing new dishes to The Cellar menu that display a gourmet choice of original creations based on an array of organic products".

Coming from Durbin in South Africa where he trained and began work as an apprentice chef at age 14, Chef Dewet started at the Karos hotel chain, then moved to Global Resort- the company managing Caesar's and Graceland, followed by a three-year contract at the prestigious Royal Livingstone Zambia, managed by Sun International. His experience was gained at Africa's finest hotels, where at 25, Dewet bore the flag of the youngest executive Chef in the whole African continent.

His career then took him to Asia and the United States, then to the Middle East, with a Saudi Chain, before moving to Dubai and the Aviation Club.

He is keen to make use of the quality ingredients available year-round in Dubai to create what he calls "comfort food" for The Cellar Restaurant.

"When you serve high quality products, that marry well together you are sure it's a success. It's all about the way of preparation that needs to be kept simple. We use original and organic ingredients in all our recipes and these cannot be inundated with different flavours or spices. To be tasty and 'comfortable" a meal has to be the least complicated. Excellent flavours come from the right combination of the simplest of ingredients", said Dewet.

Chef Dewet's forte being fish dishes, one of his specialties is "citrus infused monkfish served on a vanilla risotto. "By keeping simple, we also have to avoid being boring and our dishes always come with a twist, be it the surprising spice or the unusual topping, as long as the flavours compliment each others", he added.

Chef Dewet's new menu can be tasted at The Cellar restaurant, daily for lunch and dinner.

THE CELLAR RESTAURANT

The Cellar is a two-tiered restaurant featuring a large, relaxed dining area with splendid views of The Aviation Club gardens. Floor to ceiling windows lining the large dining and bar areas feels spacious and airy. Diners can choose to eat in either the main restaurant or outdoors, taking advantage of the attractive Roof and Garden terraces, overlooking the lake.

The mood and music are chilled and relaxed, offering a fusion of rustic and contemporary design with an obvious edge towards retro; the warm lighting gives each table a feeling of intimacy.

The Cellar is a heaven for the wine connoisseurs as it offers one of Dubai's widest selections of wines at exceptionally attractive prices.

Lunch is available from 12.00 noon to 3.30pm with Dinner starting at 7.00 pm to 11.30 pm.
In addition there is a bar menu available from noon to 1.00 am!

The Friday Brunch, offering a la carte menu (all you can eat) with light jazz guitarist, is a highlight of the week.
