No strangers to successful Asian dining concepts, from the casual buzz of Yum, to the sophistication of The China Club and Minato, the team at InterContinental Dubai have picked another sure-fire winner with this one.

The concept is simplicity itself and best explained by a literal translation - in Japanese, yaki means grilled and niku means meat. All the tables in the restaurant are built around a central grill tailor made by SHINPO products in Tokyo, Japan, where you are your own master chef grilling a variety of meat, seafood and vegetables.

The ingredients are wonderfully fresh and supported by a number of Korean classics such as the legendary fermented cabbage dish known as Kim chi. All dishes are carefully prepared by newly arrived Japanese Chef 'Keita Mizuno' and his team, to ensure only the best ingredients are presented to the real master chefs, you.

For those of you not familiar with Korean food, they tend to like things quite hot - red chilli paste is a big part of the experience. While the idea and many of the ingredients are Korean, the execution is very Japanese. It's stylish, fast and a lot of fun.

'It's the interactive element that excited us most,' said Scott Murray, the hotel's Food & Beverage Director. 'When people get together around the grill, there is always a lot of energy. Yakiniku diners like to get involved. It's just the way it is, from the streets of Tokyo to the avenues of New York.'

Central to the Sumibiya experience is the restaurant interior, designed by leading Singaporean based hospitality and leisure designer David Tokiwa. From the warm lighting to the clean lines and neutral tones, the emphasis is on cozy simplicity. Clever use of contemporary drapes and Japanese lanterns allow the staff to create little private spaces away from the buzz of the main space.

In keeping with the interactive element, the kitchen is very much a focal point in Sumibiya with a team of expert chefs performing their dazzling ritual of preparation and cooking.
