HACCP certification process takes approximately six to twelve months and involves substantial training and implementation of HACCP policies and procedures including systematic documentation, analysis and process verification.
Even before the advent of HACCP in Dubai, all Shangri-La Hotels have always taken great pride in their care of guests by implementing a unique proprietary food safety management system - SFSMS. The system consists of stringent international hygiene standards which encompass supplier standards, food processing, as well as staff training.
To ensure consistent compliance to these standards, third party audits are conducted by Johnson Diversey twice a year and where all Shangri-La Hotel & Resort properties are expected to score at least 95 % compliance. This high level of compliance can only be achieved if emphasis is placed on building a hygiene culture. Management commitment and involvement is a must, since food safety can risk being neglected due to the costs and the amount of paper work involved, and the need for consistently monitoring the food handling activities.
